The Chesapeake Bay blue crab is an age old delicacy in Virginia and Maryland. They are wonderful steamed and the soft shell variety, when sauteed or fried, is pure heaven on earth. The blue crab must be closely managed however due to over fishing, poor bay water quality and other natural and man made threats.
